Waikiki Pineapple and Sausage

Ingredients:
1 1/2 lbs bulk pork sausage
20 oz pineapple chunks in syrup
1/2 cup packed brown sugar
1/4 cup lemon juice
2 tbsp cornstarch
2 tbsp soy sauce
1/2 cup chopped green bell pepper
1/2 cup drained Maraschino cherries

Shape the pork sausage into 1/2 to 3/4 inch balls, then place them in single layer in baking
pan. Bake them in 400 degree F oven for 25 minutes, or until cooked. Drain on paper towels.
While the sausage is cooking, drain the pineapple and reserve the syrup. Add enough water to the
syrup to make it equal cup. Combine that with brown sugar, lemon juice, cornstarch and soy sauce in large
saucepan. Cook and stir until the sauce boils and thickens.
Fold in the green pepper, cherries, pineapple chunks and drained cooked sausage. To serve, turn
into chafing dish. Make sure you set out plenty of toothpicks for your guests to be able to get the sausage and
other goodies out of the dish.
