Burgers and Sandwiches
South of the Border Burgers

Ingredients:
1 1/2 pounds of ground beef
1/4 cup of chopped onion
2 tablespoons of finely chopped red bell pepper
3 tablespoons of picante sauce or salsa
2 teaspoons of Dijon mustard
2 teaspoons of chipotle powder (optional, but yummy)
salt and pepper to taste
4 large hamburger buns (for low carb, leave the buns out)

Heat a grill to medium-high heat (indoor or outdoor - the latter is
best).
Mix all the ingredients together well in a good sized bowl. Make 4
hamburger patties out of the ground beef mixture. They should be just under an inch thick (about 3/4
inch).
Put the hamburger patties on the grill for about 5 minutes on each side or until they
reach your desired doneness. Keep an eye on them to prevent flare-ups.
Place the burgers on the hamburger buns and top them with lettuce,
tomato, onion, guacamole, or whatever your favorite garnish is. You can also put on your favorite condiments;
mustard, mayonnaise, ketchup, etc., or just top with more picante sauce or salsa. If you like, you can top the
burgers with a slice of Monterrey Jack or Pepper Jack cheese before removing from the grill. Give it a minute or
two to melt the cheese.
