Low Carb Sausage Stuffed Zucchini

Ingredients:
about 4 ounces of Owen's
Country Sausage
an ounce of two
of dice ham
2 ounces of
shredded cheddar cheese
1 whole small
zucchini squash
salt,
pepper to taste

Crumble the sausage and cook
until brown in a small skillet. Make sure to keep breaking it
up so it has no large chunks.
While the sausage is browning,
use a fork to pierce the skin of the zucchini 2 or 3 times.
Place it in the microwave and heat it on high for 2 1/2 to 3
minutes.
When the sausage is almost
completely browned, add in the diced ham and mix them
together.
When the zucchini is done,
slice it in half length-wise making sure that you cut it so
that both halves will stand up on their own and not roll over
to the side.
Put the sausage and ham
mixture into the zucchini halves packing them in well. Sprinkle
the cheese over the top covering well. Add more if
needed.
Place the two halves back into
the microwave and heat on high until the cheese is melted.
Serve.
Alternate
Version
Cut the
zucchinin in half as above, but stuff them with the raw sausage
and ham. Put into baking pan with a little water to cover only
the bottom of the pan. Heat in oven at 350 degrees for 30 to 40
minutes. Add cheese to the top and heat until melted. Takes
longer, but give the sausage time to blend flavors with the
zucchini. It's still easy, so if you're not in a big hurry,
this is a good choice.
Carb count with
Owen's Country Sausage (their regular brand has 0
carbohydrate) is around 4 for a small zucchini and 1 to 2
for the cheese (brands vary). So this is a great breakfast,
brunch, or lunch or light dinner for around 5 or 6 grams of
total carbohydrate.
TIP: You can subsitute
ground beef or ground pork for the sausage if you
like.
