Jams and Jellies
Peachy Ginger Freezer Jam

Ingredients:
3 pounds of fresh peaches, pitted and peeled
2 tablespoons of ginger
5 cups of white sugar
2 1.75 ounce packages of powdered pectin
1 cup of cold water
4 pint-sized freezer containers with lids

Very finely chop the peaches so that they make about 4 cups. Put them into a large mixing
bowl.
Add the ginger to the peaches and stir them together.
Slowly add the 5 cups of sugar while stirring and continue to do so until everything is combined
well.
Put the cup of cold water into a small pan and set it over medium heat.
Now, add the 2 packages of powdered pectin to the water.
Stir the pectin mixture constantly until the water boils, then let it continue boiling for 1
minute. Remove the small pan from heat.
Now combine all the ingredients by adding the pectin mixture to the peach mixture. Stir until all
is blended well and keep stirring for about 4 minutes.
Divide the mixture among the 4 pint-sized freezer containers and cover them up with
lids.
Leave them out to remain at room temperature for 24 hours.
After that, put them in the freezer. The jam will store well in there for many months. When you
are ready to eat the jam, remove a container and thaw at room temperature. You can keep the unused portion in the
fridge for a few weeks.
